    Williams Brewing Kits

    i have brewed several of their kits, and have always just pitched the smack pack- no problems, very active ferment. i am about to venture into the practice of making a starter myself, but i think you will be safe and have good results with their kits and their directions.

    hefe F.G. too high?

    i'm positive i'm reading it right. maybe i've damaged it and screwed up the readings. i didn't see any way it could be that high either, gonna check again tonight and if it's the same as a few days ago-bottle, then get a new hydrometer! if i put it in water what should it do? no reading at all?

    brewed a syrup extract kit on 2-10 (8 lbs, + 1.5 # steeped grains), added WLP300 @ 70. initial gravity, at about 66-68, was 1.086! wondered if i read it wrong, but no, that was it. not as active a fermentation as usual, but fermented at a constant 64-66, which is lower than i usually do...

    Schneider is what I want to clone- have yet to find anyone with an actual Schneider clone recipe. Found some that say it's close, and am just starting to really experiment and see what i can do.

    yep, i think i'm gonna have to learn to make a starter from now on. pitched a vial of wlp300 into a hefe last sunday, took about 24 hours to see any activity. i tried cooling the wort to 70, then topped off, so pitched at about 68- which from what i had read i thought was fine, was it too low...

    how do you know it's "heavily chlorinted"? i mean, is it the taste or smell? mine seems to be fine, tastes ok, doesn't smell- i'm just tryin to figure if it's gonna make that big a difference. just brewed first batch at current location, but never seemed to notice any off flavors at my old...
