    Jaspers Old Nebbercracker

I used the S-04 as well. When i poured the wort into the fermenter, the temp was a little low, probably around 55 or so, then i left for the weekend and couldn't monitor it, but have a sneaking suspicion it went up around 70F. For the next 2 weeks in the fermenter, it stayed around 66-68, maybe...

    Jaspers Old Nebbercracker

Well I cracked one open last night and compared it with an Old Fezziwig. Mine was in the fridge for about 5 days. Color was similar, mine was but darker. Both smell similarly spicy. Mine had a slight banana hint Prolly due to fluctuating fermentation Temps. The spices are not overpowering at...

    Jaspers Old Nebbercracker

Well, I dumped the whole mess into the fermenter on Monday night and bottled last night. Very strong orange scent, not much cinnamon or ginger (pretty happy it didn't smell too gingery) but bottled it all up. I'll give it a few weeks and see if I can get my hands on some Old Fezziwig for a...

    Jaspers Old Nebbercracker

Hey guys, I just brewed the Jaspers Old Nebbercracker last week and it's fermenting away. My question for those who brewed it is about the spice potion. It's quite cup of vodka, 2 cinnamon sticks, some ginger and orange peel. Did you use the entire potion? Seems like a lot and I read some...

    Thundercookie Gingerbread Stout

Did you use a yeast starter like they recommend or just rehydrate and pitch right in? I was interested in this recipe, but haven't done a starter yet and don't want to screw it up!!

First 5 gallon batch and question on adding pumpkin to extract recipe

This is a good idea, does the rum add a rummy flavor or do anything specific to the pumpkin? I'm about to brew an AHS Partial Mash with some added pumpkin and was thinking of adding a vanilla bean or 2 (soaked in vodka) but am now intrigued by soaking pumpkin in rum.

tropical fruit ipa with only hops

This is making me kind of excited about my next batch.. Kind of thinking of a nice Grapefruity/Tropical Fruity IPA. Gonna follow this one!

    Banana flavor after bottling

I did a 1 gallon batch that came out tasting like bananas as well. Wasn't terrible, but it was a Christmas Ale w/ spices that were not banana. I think I probably didn't wash the bottles well enough, but it could have been too high of a ferm temp, I didn't monitor it much.

    Sour taste and smell

Thanks for the replies. I've been using Starsan for sanitation. Fermentation temps for the sour batches were mid-upper 60's in a dark basement. I'll clean the bottles and fill with Starsan, shake for a bit and empty, there is still a decent amount of suds from the sanitizer in the bottles prior...

    Sour taste and smell

Hi all, I'm new to brewing and have done a few small 1 gallon batches. My first was the Brooklyn Brew Shop Everyday IPA kit. Turned out well, slightly overcarbed, kind of gave me plastic tasting burps (tap water). My second kit was Northern Brewer Smashing Pumpkin where I used real pumpkin...
