I brewed a 4 gallon batch today of IPA using Simcoe (and lots of it... Thx Brewiz :mug: ) and had to call my Homebrew Sensei Brewiz and asked about how to finish it out. He suggested Cascade so I threw in a nice handful at 10 mins before flame out. The false bottom he gave me can't be...
I did a AG batch tonight with more Centennial and Warrior hops than I can remember.
My false bottom looked like it was caught in a hop blizzard!
This is a HG brew and Brewiz was here to help me and shoot the "suds".
The IBU's better be thru the roof!

I transfer out of primary about 2 hours before going in on top of the fermenter. It seems to work out so good and the beer is awesome. It has been good for 6 batches total - I have not tried to push it further.. yet.

For that high of an OG I would do a stater or go on top of a yeast cake. I Just did a HG IPA and went on top of a cake and I have "little" bubbles at 20 minutes. I've done 4 of the HG brews and they seem to like a healthy yeast environment and show activity in the first 24 hours.
