Grits are ground hominy. Hominy is made by cooking corn in lye(basically just a very alkaline solution) until the corn puffs up like popcorn and the skins start to dissolve and are washed away. Simply ground corn would just be corn meal or the base for polenta.

I am in love with this beer(same beer, changed name), but I can't find any recipes for it online! I was wondering if anyone has tried to make it or maybe just has some insight into how it's made. According to Lo-Hi, they layer American, German and British techniques.
