    Mexican Vienna Lager critique

Hallertauer & Vanguard are sorta similar. I just had some Vanguard on hand. The 60 minute hops really won't matter much other than for the total IBU's. 1 lb. of C60 in 5 gallons would be too sweet for my tastes though. Cheers!!!

    Super Simple 15G Plastic Conical

If you're worried about the screws just replace them with stainless steel screws. As far as leaking goes, who cares.... If it's tight it leaks into a jar of water. Otherwise it leaks into the atmosphere.. If you're thinking you'll pull O2 into the fermenter, there's plenty of CO2 in there to...

When to give up on sulfur smell?

Try putting a piece of sanitized copper in the keg for a week or two. You could use a length of copper tubing suspended with monofiliment fishing line. Cheers!!!

    Super Simple 15G Plastic Conical

You all are going to drive yourselves nuts trying to get a good seal on your conical. For the record I've brewed 100's of gallons in mine without one bubble in the blow off. Never had one bad batch, ales or lagers. My advice to you all... Spend your energy on something more important...

    strong Alcohol taste and smell

Never dump it until you've tried everything at your disposal. Right now I'd say that's time. Leave it in the primary for the full 3 weeks, 4 wouldn't hurt. Then package it and forget about it for a month. THEN let's see what you have... Cheers!!!

    strong Alcohol taste and smell

I'd let it rise up to room temp to finish out. Cheers!!!

    strong Alcohol taste and smell

Just let it ride. Every time you open the fermenter you open the door for an infection. As long as I know fermentation took off I never check my Ales until week 3, Lagers week 4. Cheers!!!

The beer is still green. Give it another week in the primary to let the yeast finish its job & then package it. If everything else is right the beer will be fine... Cheers!!!

    Stressing Yeast in IPAs

I've heard of stressing yeast to create esters in Wheat Beers but never heard of doing it with IPA's, although it sounds logical... Cheers!!!

    Perume in my bottles.

Never having been in those shoes all I can offer is what I'd try. 1) Remove rubber washers. 2) Soak with diswasher detergent or Oxyclean for a few days as mentioned above. 3) Rinse. 4) Place the bottles in direct sun light for a few days. If that didn't do the trick I'd try some Red Devil TSP-90...

Why do my ales seem "creamy"?

Okay, I think you're tasting/feeling diacetyl. Google it and see if it fits. In lower amounts you may not taste or smell the butter/butterscotch. Try leaving your beer in the primary for 3 weeks next time and see if that doesn't fix it. As well as reduce the carapils as mentioned Cheers!!!

How long are you leaving your beer in the primary fermenter and at what temp are you fermenting?
