I only do ~2 gallons as sort of an experimental batch. That way I get to try new ideas/things without having to sit there and drink 50 beers. I do 1 gallon for meads though because honey is expensive.

I received a wyeast for a Belgium ale during the hottest weeks of summer an it sat out for a few hours before I got home... I broke the nutrient pack and pitched it about 3 hours later... Still fermented!
So sorry for the rant but I'm sure it'll be fine. Those yeast are hardier than you think!
I'm more shy about giving out my beer to try. After all, what will they think? Too much pressure, ha.
But I managed to get 2 friends who hate any beer not miller to say its not bad, with a dark braggot among all things too.
15lbs of honey? 5 gallons of water, add honey, yeast, yeast nutrients into a container. Wait a year, then...
