    This looks really good mate. A fine job on your first mead. I'm not sure about how many cloves and allspice went in, but I have never used either so I cant offer much help there. I only wish my first batch was as intersting as this. Keep us posted :-)

    If you want to backsweeten , you need to add it I havn't backsweetened cider, but what I do ... I dont think it alters taste much. When I started out I was worried about it too, but hey, you can always make more ! Wait untill the ferment is done Add the campden , wait 24 hours, then rack...

    It could be done Watch the airlock , if theres no bubbles or it bubbles very slowly (eg 1 every half a minute- a minute) You could rack it Leaving it for another week or two wont hurt either

    ^^ I only use one dose of nutrient with mine, and thats when it's goes into the carboy. Mead is great because theres really not much you can do to botch it. Just clean your airlock / replace with clean one Have fun
