    HERMS Brew Station

For the HLT, are the elements 110 or 220?? I've already got my HERMS rig mostly set up, and have been thinking of doing electric for the hot water and sparge, which would be extremely handy, not to mention a gas saver. Also, how did you get your kegs so shiny? Great rig, and great post for the...

What I did for beer today

Brewed batch of Doppelsticke today, 3rd attempt at this style. Scored 42 @ FOAM Cup in November, though this recipe has been tweaked slightly. Hoping this will be even better!! :D

    When to Keg??

This isn't a big beer, 1.055 OG. I want to cold condition it for at least a month as I will be pulling a few bottles from it for MCAB XV, which is in May (no specific date yet).

    When to Keg??

Long time homebrewer finally getting my shot at kegging. My question for those with some experience is: When do you normally keg, after primary, or should I perform a secondary? This is a batch of Northern German Altbier, and has been in primary for 2 weeks.

Advice on best ways to control my mash (LONG)

One thing that might help, if it wasn't brought up, is to pull the wort to your boil pot slowly, like one gallon every 12 minutes or so. I regularly pull 7.5 to 8 gal of wort, so this should be at least an hour to hour and a half process. My efficiency is always 80-85%, though I do crush my own...

    unsafe?

Depends on what style you are priming. Hefes an dunkelweizens usually carb around 3 volumes of C02, requiring close to 6 oz of sugar to accomplish this. My dunkelweizen took 5.8 oz of table sugar, haven't had any issues. The temp you place the bottles in after priming might also have an effect...

How Soon to Brew a Dunkelweizen for Competition

Had a discussion about beer freshness with a fellow brewer, the gist (or grist, if you prefer) being whether a dunkelweizen brewed in Sept would still be good and fresh for a competition in March. I brewed a recipe that garnered me first place in the Bluebonnet Brewoff this past March, but it...

My weizenbock didnt attenuate all the way!

I don't see anything suggesting how long this was in the primary fermenter (1 week, 2 weeks??). I just bottled a weizenbock myself (primary for 13 days, then bottled), though I pitched directly onto the yeast cake of a previously brewed dunkelweizen. OG was 1.080, FG 1.016, so I had proper...

What I did for beer today

Brewed a batch of Weizenbock, double decoction, brew day went beautifully, other than my gas bottle crapping out on me. Had a backup on hand though, disaster averted, lol. During the brewday, bottled a batch of Dunkelweizen, then poured the cooled weizenbock wort directly on top of the yeast...
