I picked up 5 gallons of cider from a local orchard yesterday afternoon. The cider is not pasteurized and no preservatives, but the lady there said they use an 'electric eye'? She also said there's nothing wild in it and it would make a great hard cider. I did a search but came up empty...

I noticed some floaters while checking gravity last night, little whiteish brown guys on the surface and in the wort itself. I was alarmed at first (maggots!?!) but I'm pretty sure its just little yeasties still in suspension.

I did the 'lid on' when I brewed my first batch. Never going to make that mistake again.

Hey all, I just brewed my second beer last week, a Steam Beer kit. I want to use the yeast cake from primary when I transfer so I got a 2nd Steam Beer kit, along with 3 more lbs DME and 2oz more hops, thus an Imperial Steam Beer. I want this beer to come in around 8% or so and be more...

Yeah, I was lucky enough to try my friend's before opening my own, so now I know to let it rest for a while.

I'm a fan of Victory, a lot of what they do is great. If you didn't like the V12 this time and want to experiment, get a bottle and stick it in the cellar for a while. I recently had a bottle of V12 from 2005 that was quite tasty and much less hot than it is fresh.

I'm a big fan of Sly Fox. I really enjoyed the Odyssey but I have to say their Christmas Ale is the best, easily my favorite Christmas beer!

I hear you. It's frustrating that I'll need to look at how my beer turns out and balance that with the mistakes I made.
