Heady Topper- Can you clone it?

Maybe I should have clarified- his wife doesn't react to HT and a few other beers of his. My wife, who has celiac's disease, doesn't either. I won't debate you on the "what is Celiac safe and what isn't" topic because that's not for this forum.

Heady Topper- Can you clone it?

Kimmich is also trying to source all ingredients locally from VT. That includes the hops. I'd bet if he's using Columbus that it's grown locally. I've chatted with him many times- the best information I ever got from him was that Heady Topper is celiac safe. His wife has celiac's (so does...

New England IPA "Northeast" style IPA

I would do a starter if you want the hops and grain to shine- golden promise brings a sweetness to the whole thing and if you're using aplomb hops that you want to bring out- a starter is a must. If you stress Kviek yeasts, they turn into ester bombs. I underpitch Kveiks when I'm using...

There's the magical "hop IBU chart" as when OG goes up, perceived IBUs does too.... unless your FG is off of course. I do find that as I up the IBUs, it does seem a bit more bitter. My FGs always hover in the 1.013-1.015 range on my "big" NEIPAs (OG greater than 1.075)

If you use grain for additional fermentables for a double NEIPA, expect the color to darken. If you want that same light yellow-orange color of a regular NEIPA, use sugar to up your OG. as logical as this sounds, it took me a bunch of batches to figure out why my colors were so dark.

I've used a S-04 blend. As with 1318 and other yeasts, if you pitch a high cell count, it gives you a pretty decent ale. If you severely underpitch it, it gives you the estery goodness of a great NEIPA. 1318 is really, really good when under-pitched, though. S-04 doesn't shine nearly as...

I’m now a believer of the hard crash and no active fermentation hops. Zero hop burn out of dry hop. And at 70F DH I got great extraction out of 2019 Citra and Simcoe. This is one of the best ones I’ve done yet. this thread has been invaluable.

My first Oat NEIPA. Many learnings from grinding and efficiency, to the mash water loss... to the insane finish of 1.003 FG Color and taste are on point so far- still need to carbonate but it’s insanely promising. But this was the first time I did dry hopping and cold crashing in the fermenter...

Other Half Daydream (oat cream IPAs) - all grain clone attempts

I've been roasted on homebrewing subreddits for this- but I think Al pots oxidize the wort. I have a very "seasoned" Al pot, but I still can't get past a certain hue of the beer- I've tried pilsen NEIPA bases too. It's not terrible, as I can't taste it, but the color isn't quite as light as...

what is your kettle material? Stainless or aluminum?

Lighting is everything, unless it's so bad it is brown. Using an iPhone 11 I can make a glass look like straight orange juice or muddled Sam Adams NEIPA (which isn't bad for the price). I think I'm done experimenting with Cascade / Centennial in whirlpools and DH. Touches of them can change...

If you don't mind me asking- what was your S-33 / K-97 / WB-06 blend ratios / weights? I've been doing the old S-04 / T-58 / WB-06 blending and have tired of it. The esters aren't as bright as I want them to be. I've noticed English Yeasts (1318, S-04) give off a darker SRM. I did a Kveik...

YVH is the Amazon of hops. Shipping is 2 day, every time. You can order your dry hop bill after your brew day when you unexpectantly dump the last of your Citra into your whirlpool. This year's Galaxy and Citra have been great. About to try 2019 Simcoe.

That's got some great color to it. What yeast did you use? And what was your starting water chemistry?
