If you want to cut the dip tube, you really don't need any special equipment a 10 dollar pipe cutter will cut it just fine. You can get them on Amazon or any big box home improvement store store.

I've used twist off bottles accidentally before. The cap was harder to attach. It seemed to seal just fine. Didn't even notice until I opened the bottle. I don't make a habit of it though.
When making extract only batches, sometimes if you don't mix it well enough before taking the gravity, the "Heavier" extract will stay the bottom wiht the thiner water at the top and it could skew your gravity results. With all extract kits, if you made it per the instructions, I would worry too...
