I appreciate the input about the mash temp. I had done some reading and was looking to improve the body in my beers so this is the first time I had mashed over 154. We'll see how it turns out I guess.

I think I will try out a half 2 row/half maris otter on the next batch. I made a pure maris otter batch and thought it was somehow overpowering so maybe mixing it with two row would be a better balance. I'm really just experimenting with no clear idea how...

I will have to say that using 8 lb of Maris Otter extract with no crystal in it is leaving something to be desired. This is a pretty strong, malty beer that could use some sweetness to add complexity. I like the hop schedule though. I will probably do one of the other...

I scored some Maris Otter LME and I would like some pointers from more experienced brewers. I've never used it before and would like to do a recipe that will showcase the maris otter flavor and be an english style beer. Lastly, it should be a delicious beer.

Good thought. I wasn't sure exactly when to put in the Sorachi Ace or the Mosaic really...but maybe if Sorachi Ace is a really good flavor hop then I can bump it. what then to do with the Fuggles and Mosaic...

Ok, final update-
Excellent beer. Only thing I want to do differently next time is tweak the malt flavor. It was a great showcase for the Galaxy hops but there was a little something missing and I think it needed more malt body.
Yet another update-
I've bottled the batch and of course, sampled the goods. This stuff smells amazing! The aroma has certainly changed over time and the flavor reminds me of oranges. Very pleasant and possibly my best concoction yet. It will be about Christmas before I start drinking these...
