Funny about the Mongeryville homebrew site don't know why I didn't look there. Thats where I get my ingredients. HA On another note if you live in PA and have not yet had this beer you are missing out.
Thanks guys

Does anyone know champagne yeast fermentation time. I was wondering when I should bottle I know the rule check with a hydrometer bu mine broke. Any ideas. There is absolutely no activity in carboy whatsoever. The apple juice went from light to darker in color.
Just put together what I think is Apfelwein what are your thoughts.
4 gal apple juice 9 apples had them laying around
Champagne yeast 1 packet dry.
Thanks
Yeah I topped off to 5 gallons. I thought I mixed it well but they may not have been the case. Its churning and turning like crazy right now. I will take another reading later on when transferring and update.
thanks
I just finished up another ale and took a reading with my hydrometer. It came in at 1.030 dead on at 60 degrees. I played with hydrometers in the passed but its been a while. Does this reading sound right, Right from the start. Recipe below.
6.6lbs Golden LME
1.5 pounds crystal 40 l
.75...
I was hoping to leave that as a last resort. I hate to open the cotainer. I assumed I would be able to see a little bit of activity by now. This is my first Lager so I'm not used to fermenting this cold. Maybe its just me. I have noticed sediment build up in the bottom.
