    I attach my STC-1000 temp probe directly to my carboy. Insulate with a little piece of neoprene. Seems to work well for me the last few years.

    Collar Porn

    I built my collar with the bare minimum of tools about 4 years ago. But have since gotten into woodworking and have much nicer tools now. I'd love to make a new collar, but this one is getting the job done just fine for now.

    Help w/ computer fan wiring...

    I got a small cheap $10 fan from BigLots and mounted it in the top corner of my ferm chamber. That things moves a TON of air! (and has 3 selectable speeds). Totally worth the (small) investment.

    Cider recipe that's not too sweet?

    Anyone have a good recipe for a simple cider that's not too sweet? Wifey wants a cider on tap, and likes Crispin, but would prefer something slightly less sweet if possible. Any recommendations?
