Everything I've read so far says that the longer you wait the better the wine will be. This wine thing may work out well for a procrastinator like me. :)
Between buying a boat and getting married two years ago I haven't had much free time for brewing. :( I finally have some free time and got tired of looking at my empty taps. So threw a nut brown ale in the fermenter.:) Hopefully I can do a few more batches and fill all my kegs before boating...
Only problem I have so far with my nieghbors is keeping them away from my kegerator. :)
They did mention that they want to help/learn during my next brew session. Could be the start of a neighborhood brew club.
Oh you opened up a can of worms here :) Everyone has a different way to carb.
I've done two batches so far and just put them in the kegerator at 40 degrees and 12 psi. They both carbed up and were ready to drink in a couple weeks.
Thats good to hear. My first beer (a Bavarian Wheat) had an off aftertaste and was getting better every week. When my second beer was ready to tap I unhooked the keg and it has been "ageing" in the back of my kegerator for about four weeks now. I'm hoping to have time to tap it again this...
Cave Creek Chili Beer is by far the worst I've ever had. I bought two 22oz bottles of this stuff about 13 years ago in AZ. Tried drinking one and the other is still sitting on a shelf in my house as a reminder never to try something like that again.

About 15 years ago someone handed me a Sierra Nevada Pale Ale. I was hooked on microbrew but still drank some bmc.
5 years ago I took my first trip to Munich and spent a month drinking Augustiner Helles and Franziskaner Weissbier. Haven't been able to drink bmc since :)
Chillers are fairly easy to build. I made one right before my first batch. Cost me $30 and was worth every penny.
