So here are the news... Beer has been bottled for just just over 3 weeks now. Tried a couple so far. It has a somewhat strong banana smell which points me that it might have fermented a bit too hot. But I really like the taste, it's a nice mix of spices and a bit of fruit. This really came out...

Actually it is brewed in Canada by the Labatt Brewing Company. It is very good indeed. What sucks is that Unibroue was sold to Sleeman a few years ago, and then Sleeman was sold to Sapporo. So your Unibroue's are now Japanese beers.

Mind you, we do not have the same bottles in Canada than you guys have in the US. And with twist-off caps and a bench capper, it all works fine.

... for their labels, or how easily they come off. :D I just put 24 bottles in my sink with warm water and a bit of dishwashing soap, and most of the labels came right off the bottles in less than 10 mins. Gotta love that. Thank you, "bud"! :mug:

Actually they don't have US 05, they only carry White Labs yeast.

What would be a good replacement yeast from White Labs, aside from Nottingham which my LHBS doesn't carry?
