    How do I get started?

There are no stickies on getting into winemaking, so I'm hoping someone can give me some advice. I am an advanced all-grain homebrewer, and I've had good luck with cider and mead making as well. I am interested in making a batch of two of wine from concentrate kits. Is it just as easy as buying...

Can't find the Son of a Fermentation Chamber plans

Every link I can possibly find for it is non-functional. Can someone possibly link the PDF in this thread?

Mixing yeast strains (001 + Belgian?)

Yes, it really is as easy as pitching two vials of yeast, and often, using two different yeasts can add a really nice complexity to the beer. I would rethink your combination of yeasts though. WLP001 is known for its clean and neutral character, so it will probably weaken the spicy Belgian...

Who can tell me about Better Bottles?

Better Bottle users assemble! Recently, I had an unfortunate incident that destroyed two of my 5-gallon glass carboys. At the moment, all I have left is my 6.5-gallon glass carboy, a bucket and a couple of 1-gallon jugs. I really want to replace my lost carboys, especially as I am starting to...

    Hydromel

Thanks, all good info! Will definitely be trying some out in the very near future. I'd love to do some kind of stone fruit and perhaps a hibiscus batch, and I like the idea of lighter carbonation. How quickly do you find that yours are drinkable? I've heard somewhere in the 60-90 day range

    Hydromel

Anyone had luck with hydromels, or "session strength" meads (OG 1.044-1.064)? I'm very intrigued to experiment with them as they are quicker to mature. Please share any advice and experiences you have

    Pumpkin's Effects on Cooler MLT?

No need to worry about it...I just made a pumpkin saison two weeks ago. All you have to do is clean it out well. You really shouldn't need rice hulls either, unless you're using a very high percentage of pumpkin in the mash.

    Limerick Session Stout

Good stuff! Since posting this recipe I've also done a version without the crystal and with the roasted barley at 1 lb even...it is definitely more of an "authentic" Irish dry stout that way, and I honestly can't decide which one I like better, it just kind of depends on my mood. One of the...

Do you keep a lager on tap for friends?

I wouldn't go as far as American lager...unless you really enjoy that and want something along those lines on your tap system [no judgment here!]. I definitely like to have a variety of beers on taps, so as to please as many friends as possible, as well as have a beer for my every mood. I...

New(?) idea for chilling in summer.

Sounds like a good plan if you've got all that equipment. Sort of a more high tech version of using a pre-chiller in an ice bucket to cool the water down for one's immersion [or counterflow] chiller.

    Films You Watch when Drunk?

Strange Brew all the way. A bizarre cult movie about Canadians, hockey, and beer? Hard to get any better of a drunk movie than that.
