    Hola ya'll, long time no post... Made landfall recently in the Galapaglos (sailed from Panama). The local "Endemica" craft brew brand aint bad.

    Making vinegar from beer

    There is no obvious visual clue, but 30 days should be plenty. Acetobacter will continue to live in the vinegar after initial fermentation is complete, that's why you continue to see mother production....and why you can use existing unfiltered vinegar to inoculate a new batch. Vinegars age...

    For situations where you may not have access to an oven, bread can be made in crock pots, pressure cookers, dutch ovens, etc. I spend a lot of time on boats and its more common there.

    Barrel Aged Milk Stout by Casa Bruja ("Witch House") brewery, Panama. They do a lot of interesting/experimental beers.

    Most of my brewing supplies are still back "home" in Guatemala (we have been making an unplanned transition to Panama for like 5 years now!), but I ordered a ph meter and some sodium bicarbonate, drew off about a 2 liter sample of the unfinished mead, adjusted ph to about 4.0 (it was a 3.3)...

    Alcohol sales are suspended here in Panama. In a crisis you gotta drink what u got...so we tapped into this batch last night. Its a little sweet, but quite tasty.
