    I brewed a porter last night. Any problems if I wait to pitch the yeast about a week? Afraid I won't be able to tend to it when it's done fermenting if I pitch now.

    sorry, my bad. instead of pitch the yeast, i meant to say add the priming sugar. yes, it's already fermented. i'll just keep it as is and see what it gets me.

    fermented my IPA in a 7 gal. carboy that apparently I had marked a little shy of 5 gallons. I transfered to a 5 gallon 2ndary are saw it was shy by quite a bit. Starting gravity was 1.050 and currently it is 1.012. Can I top it off with water to reach the 5 gallon mark before I pitch the yeast...

    what to do

    took a gravity reading. it scaled out at 1.290 at about 60 degrees and tasted pretty good. don't have the recipe on hand but if i remember correctly it was 7 lbs of extract and a 5 gal batch.

    what to do

    i brewed a pale ale that is on the high side of alcohol content and left it in the primary. along with other rookie mistakes, i kept it in the basement where it was a little colder than an optimal fermenting temp. (60-63 degrees). it's been in there going on five weeks now and is still bubbling...

    this is one part i can't quite get my head around. brew day gravity was 1.039 @ 75 degrees. 12 days later it is 1.019 at 65 degrees. have read this section several times, but am still confused as to what it all means. i was encouraged though 'cause it smelled good and tasted good too, albeit flat.

    my first batch is still in the primary carboy with very little signs of activity in the airlock. maybe one blurb every minute. was hoping to bottle this weekend. should i switch to a 2ndary or will it be ok to bottle? have not tested the gravity. it's and "english bitter."

    no signs of fermentation overnight

    finally, some action! it's starting to foam ... slowly. i've got a 5 gal. carboy. i vent this with a tube to a bucket will mild solution, no? idaphor or whatever it's called. do i have to change this solution once it starts to foam thru the tube? if so, how often.
