Just Tasted my Wee Heavy Scotch Ale!

My First original recipe for a Wee Heavy!!!! The ABV clocked in at 7.8%. Mind you, this is a taste pre-bottling, but OMG!!! So light with a nice subtle sweetness. Just a babies breath of smoke from the peated malt. I can't wait to bottle this bad boy tomorrow! This is easily my best brew, and I...

    Scottish wee heavy opinions?

I am about to bottle my Wee Heavy. I used 30 grams of peated malt. Very very light flavor. Do not over peat it or you will have a malty rouche beer. There is a big debate on smokiness in wee heavies. 6 an 1/2 dozen if you ask me. I love just a hint of smoke, I mean just a tiny bit; it really...

2 questions about bottling and priming

Hi All! I had a question about bottle drying trees: How much easier does the tree make bottling? I have a small kitchen, and it seems that it would make it easier. Also, How much priming sugar should I use for a 5 Gallon batch of my wee heavy scotch ale? This is my first "original...

Using certain yeasts will leave that hop flavor be...

"Guilty" confessions of a beer enthusiast

Living in California, I am surrounded by hop heads. I am an anomaly in that I love malted beer with less hops (although I do love IPA's too). My go-to session beer is Guinness. And now that it's at my local costco, It's even more appealing because of the price.

    Stout Issues

Are you using roasted barley? If so, you might be using too much. Roasted barley can leave an astringent flavor.

If you were forced to stop brewing...

and you had one last batch that you could brew, what would it be, and why? Mine would be a fat wee heavy. I am a malt head to the bone, and wee heavies always treat me right :ban:

how do you know when fermentation is stuck?

    Would it hurt to.....

I just figured that when I make starters, I give a swirl to the growler every now and then to keep the yeast suspended. I want to buy an magnetic stirrer as the next addition to my brew kit. I had an explosive fermentation the first few days, so I know I'm going to get beer. I just want a...
