I made this lagunitas clone recipe in the past and loved it, plus I added some peach extract too. Came out great. However, I want it to be a little stronger than the original 4% or so abv. I would like it to be around 7%. What should I add and how much?

Has anyone done this? Was the pressure ok without blowing up the bottle? Did the beer taste ok later after warming up? Or should I bottle?
If I do bottle what needs to happen when I take it out of a keg to bottle? Add sugar? Or just bottle?

I am making this brew and have about 3/4oz of williamette hops left over from another brew. It doesn't call for dry hopping it in the recipe, but I may consider it with these left over hops. Any thoughts? How would it change the beer?
My experience is obviously very limited but i would take all the "it will be ruined" with a grain of salt. It may not be as good to a professional beer taster, but I bet 99% of people would never know.
I made a lagunitas IPA clone with peach extract added to the keg. It is awesome and could definitely compete with store bought brews. Not quite as hoppy as I like, but very good which I think the peach hides the hops
