Thank you Drez77! Your pressure transfer setup really was my first peek at what you can do with a racking can and the right fittings. There is a lot of potential in that type of setup.

I've brewed this recipe twice now and both times have been good, although the second time i tried to make 10 gallons of it and didn't hit near the OG; 1.085. I guess I'll be doing it again!
Yes, lagers are more complicated than ales. Do your homework. Most importantly, you need a lot more yeast and to be able to cool the wort to about 50F and keep it there for a few weeks.
I think a key point to getting it to sleep and storing it well is to get the oxygen out. Boil the water for 15 mins or so to get the oxygen out (as well as sanitize it) let it cool, then mak.e sure the jars are all the way filled up. Decanting most wort would help. Pour slowly to avoid...
