I have been doing a 90-110 min boil for the last several beers. Mainly due to having to having bad sparge eff. and collecting almost 10 gal of runoff. I let it boil to a known mark on the kettle where I begin the 60 min boil by the first hop addition.

Sounds like you're using the integral temp controller. On a fridge, that should work and save the $$ on an external.
Without knowing your model and photos it is difficult to say exactly how to relocate it. If the sensing bulb is integral to the thermostat then your worries are few.

Your house is run at around 11 inches water column (iwc) or about 0.40 psi. That is less than half one pound per square inch. The burner is no doubt 10-30 psi. It is a different style burner which is not nearly as efficient but makes a lot of heat in a small area, fast.
