I am also looking for a selector switch that can handle a chest freezer's start-up current of 12 amps.
Can you explain how a relay, in conjunction with the switch, would enable a 10-amp switch to be used?
I thought I'd share my process for canning starter wort. This seems to be the easiest method for me.

I've had experiences similar to Yooper's in my LHBS. One time I needed special roast for an ordinary bitter and could overhear the employees complaining about having to dig it out of a bin way in the back. Buzzkill.
