    SO I'm curious how this turned out. My guess is you either ended up with bottle bombs or the beer turned out sweet or cidery. Also curious if you've tried carbing in your mancan. I just got 3 of them for a song and I wanna try them out. Na Zdrowie!

    I get the Wine Expert World Vineyard Moscato kit. The wife and I love it. I would put it a little better than Barefoot. Though I would recommend: if you can get the Pink Moscato kit, get that. It's better!

    You should start worrying approximately NEVER. Relax and let the yeast do it's thing! You're making beer!

    Up to 72 hours is definitely not unheard of. And there is no way you have had fermentation complete in 72 hours. Impossible unless you started with 1.01 wort. You may have had gotten krausen fall within 72 but primary fermentation takes at *least* a week. No off flavors will result, biggest...

    Lowering the temps will slow down fermentation. But as long as you're in the recommended range of the yeast you're fine. Relax!

    The cardboard taste comes from oxygenation after fermentation. Usually during bottling. 65-68 really isn't that low but as long as you're storing at 59, you should be fine. Nope, no other risks. You're fine. relax! Really you generally want to be nice and cool. What yeast did you use?

    Unless you're adding things like fruit there really is no reason to move to secondary. All you're doing is adding a risk of contamination and/or oxidation. Just let 'er sit!

    Ahhh swimming at the rec center. Them's is some good memories! It's gone fairly downhill. The fairgrounds are all but dead except during fair season. Southwyck area is a ghost town now.

    I've never been there. Of course I'm rarely on that side of town. For me it's either Anderson's in Maumee or Cork's in Perrysburg/Rossford.
