    Yep, most likely a lacto infection. I agree with Yooper. It happens, I just opened a bomber from a commercial brewery 2 days ago that unfortunately had a lacto infection. Might want to recheck your sanitation procedures.

    NHC 2012 First Round Scoresheets

    All 4 of my entries to Pittsburgh scored much lower than expected, including one beer that just took a silver medal in the Great Az HBC with 42 points. I know it's the nationals but they only gave it a 28. Looks like Pittsburgh judges were tough this year.

    Mash in plastic bucket

    I mash in a plastic bottling bucket with a stainless steel false bottom. I use blankets and towels to insulate, works great.

    When to add coconut...

    Damn don't know how you've pulled that off! Nice. +1 for the 501st Dropped mine on the floor after putting it in the case, (bottom fell out of the case sending my hydrometer to the floor.) Stupid me.

    It is pretty malty but not overly sweet. As for the hops, the bitterness seems to balance with the sweetness, and it has a nice citrusy aroma.
