    Hahaha. I was thinking the same thing. This. Soak for another day or two in a fresh solution and then rinse as soon as you remove them. That should take care of your issue.

    Personally, I would let it warm to the low end of the scale (18°C) and call it good. I doubt seriously that 3 degrees is going to make much of a difference, plus your temp probe could easily be off a degree or two as well. Obviously, fermentation did not stop, so I can't imagine you will suffer...

    I would leave the lid off at least until the temp drops to around 150°F or so. Unless you boiled for 90+ minutes, there is still some DMS being released. Minimal perhaps, but above 140°F, anything that creeps into the wort is killed anyway. So you are fine uncovered while the temps are high.
