    Big mistake

    I agree, you shouldn't taste the beer while it's brewing. Too much risk of oxidation/contamination. Just be patient and it sit if you want it to turn out right.

    It can take a week or two for the krausen (thick sludge on top of beer) to fall out of suspension. Sometimes longer. Just be patient and let the beer sit. :)

    What's up with the Hazmat charge? Co2 is inert and you aren't mixing gasses. I pay $7.50 for mine every time I fill up.

    Juicing fruit vs bag/boil/crush

    I just ran about 20lbs of grapes through a juicer this past june. Took a sample of the wine this past week when I went to rack and it turned out great. I figure if you don't have seed solids you should be fine. Be aware though that apple seeds are toxic in larger quantities.
