I've kegged the prehopped can kits at 7-10 days plenty of times with good results.
That said, if you aren't sure, I don't think another day or two in the fermenter will hurt anything.
I took the advice here, and I brewed my first 10 gallon all grain batch today. I didn't run a stop watch, but I came in about 30-45 minutes longer than my last 5 gallon batch. I attribute that to the fact that it took that much longer for the larger volume of wort to come to a boil.

I used aluminum until this year. There are articles that tell you how to condition the pot before brewing with it.
Personally, I think aluminum is fine. My grandmother cooked nearly every meal in aluminum pots (and washed everything in bleach), and that generation of my family was very long...
All of those are pretty cool ideas! Could probably mirror some of them in 3V by doing a no sparge mash and then using your boil schedule.
