Great - thanks! I added the last of the yeast nutrient last night and stirred it up to degas, and there was a lot of CO2 being released. The gravity also moved about 8 - 10 points from the day before, so it is definitely working now. I think I may split the batch into five one-gallon...

This is probably yeast specific, but I'm wondering if there is a general rule for how long it takes to get to FG. I pitched Sunday late afternoon, and as of yesterday, gravity had dropped from about 1.090 to about 1.082 or so. I am getting no airlock activity, but I suspected the fit may not...

that temp is towards the middle of the range for that yeast if I remember. I think it was a wide range - 68 - 84 or something close.

Wine is definitely still king by miles in California. You're likely to see Blue Moon and possibly Fat Freaking Tire if you're lucky. I rarely even see a California beer for craps sake. I usually drink wine or water. I like wine, but usually by itself. Beer goes much better with food IMO.

After about a million all barley batches, this is my first wheat beer. Is it normal to have about six feet of trub on the bottom of the fermenter?

OK, just put my first wit into the bucket this morning. I went basically with recipe #4 with small changes based on ingredients on hand. Also drank my first Blue Moon last night just to see what all the fuss is about. Not bad. Still not a big fan of the style though.
