    Summertime Adjunct Lagers

So, I have brewed up a Kolsch for last summer and again this summer. I loves me some kolsch in the summer. But just for the fun of it, I selected other.... Genny Creamers FTW! Dirt cheap. Some flavor to it. Tastes good ice cold on a hot day. You know, today is supposed to be 92 here...

Mindless blather before I get hitched

THANK YOU. I was reading the earlier responses thinking "gee, the only actor/actress I hate is will ferrell", but I always catch crap for hating on him. Seriously. His ONE CHARACTER isn't even funny. I can't freakin stand him. What makes it worse is that his movies are targeted for my...

    Honeysuckle wheat beer?

I believe the berries on most honeysuckle bushes (around here I've got Lonicera X Bella and Lonicera tartarica) are mildly poisonous to humans. Not deadly, *I don't think*, but enough to make you sick to your stomach. There may be a difference in between the invasive and native honeysuckles...

    So who's brewing this weekend?

Just did put 6 gal of kolsch in the fermenter. I love my 6.5 gal carboys! Now to put it in the basement to drop it 6 more degrees (as per the stick on thermometer, I love them too). I stopped short while using my wort chiller because my regular thermometer died. I guess they don't like...

Any Successful Micro-Brewery Stories Out There Today?

Great timing. There is a nano that got started here in western NY, in the north side of buffalo. At least one of the guys is on HBT, that's how I found out about them about a year ago. I have been following them ever since. I believe tomorrow is the first day their beer is available for...

    Anyone used a bucket heater?

This is basically my story. Worked great when I was in on the stove top, it helped a ton. Now that I am all grain BIAB/fryer, it can help with heating sparge water. I have also used it as a hybrid system, helping the propane along. Helps save on the propane. Mine looks identical to that...

    Schwarzbier

Hah, good timing. I mentioned this style in my "under rated beer style" thread. I have made that style once before (and will be doing it again on friday or saturday). I used Nothern Brewer's grain with wyeast 1007, fermenting it around 59. It turned out great. I then washed the yeast and...

    Under appreciated beer styles

Hey guys and gals. I know there is a thread on most under appreciated individual beers, but the search function didn't show one for most under appreciated styles. So, what have you? I say schwarzbier! :mug:

    Maple Wine-acid/orange addition

Hi guys. My uncle in law makes maple syrup and dabbles in wine/mead. I am more of a beer guy myself, but have made a few wines. He found this recipe for maple wine and he and I are both making some. My question is about the orange addition. I assume this is for acid balance. We are using...

    1007 & Fast Maturation

I did 8 gallons (split 4 and 4) of bock. Both fermented at 57ish. I bottled one at 3.5 weeks, and was very drinkable at a week and a half in the bottle. So, yes, it matured pretty quick. Not true lager clean, but nice. I like 1007. The second 4 gallons got racked into a secondary and is...

Scaling down, smaller primary? Totes my goats.

Another option is to do a modified BIAB. Use half the water in the cooler to mash with. Heat up the other half in your brew pot during the mash. When the mash is over, lift bag with grains out of cooler and put in to brew pot for your sparge. Lift, add all wort together and boil. This...
