I've downloaded both guides and they are helpful, but he already has most of it posted on that site for free. I'm doing something very simillar to the AOI controller build. It seems simple enough and easy to expand down the line.
I have the same one and used to use it in a 10gal rubbermaid cooler for a hlt. It is submersible meaning you can put in liquid beyond the top of the heater itself. I never tried to boil with it, but it would get pretty close...~200*F or so if I left in the cooler.

Simple PWM. That's a clean way to do it. Basically just turn the dial and monitor the thermometer.
1800w isn't going to get you to a boil anytime soon. I use a 1500w bucket heater in my hlt occasionally and it will get close to a boil....but it takes hours to do so.
