NBT guy? Anyways congrats on your Brutus build! I love the way it is basically an all in one system. I'm looking at doing something similar but maybe add an additional section to mount a milling station. Where did you get that huge water filter?

There is a LHBS here in Savannah. The guy is opened most days for a few hours and weekends from like 12-4. You can find his address in BYO or google Savannah Home Brew Store. In JAX they have a pretty nice brewstore called Just Brew It.
Personally I like WLP Dusseldorf Yeast strain. I brewed up a 10 gallon split batch last year and did Wy1007 and WLP Dusseldorf. I liked the characteristics of the WLP better then the WYeast. I'm waiting for it to cool down more here in the south prior to brewing up another Alt bier.
Take the regulator apart? I've already taken and replaced the gauges. As far as cleaning just what do you mean? Looks as if the only thing that could be cleaned is the female treaded parts and outside.
Ok as the title says my PSI gauge goes straight to 20ish when I turn the CO2 tank knob to open. With that in mind the adjustment screw is all the way out. My tank and regulator have been knocked over and the gauge bent. I purchased new ones thinking that they were knocked out of calibration. But...
If you get the chance swing by sweetwater brewery they give tours from like 4:30-7. Tickets are only $6 for 6 6oz samples of their brew on tap. Exodus porter is on tap with the regulars and whatever is in the dank tank. Plus you get to keep the pint glass and a tour.

Maybe I have the yeast strains backward... The only real test is to do a split batch at same fermentation temps and see which one you prefer and keep notes.
