Just brewed a 3 gallon batch of Irish Red for St. Paddy's Day. I find 3 gallon batches just the right size, still do a 1 gallon once in a while just to try a new recipe but there never seems enough to share a few with that size I usually end up drinking it all myself.
These sounded good so I made up a dozen a couple weeks ago and I tried one last night, it delicious. I'm trying to let they sit a while more but not sure I'll be able to keep my hands off them, maybe I should start another batch.

Another way to help with the gas is to cook your beans with a tablespoon of dried epazote in the water, but I'm sure you don't have any Mexican stores in China so it doesn't help you much. Not sure if you can buy it online though.

I have 2 as well and never had a problem with them. I always put a couple 1/2" spacers under the front legs to keep the trub away from the spigot a bit and run just a little out before I bottle to clear the valve. I really like mine and hear they're coming out with a 6 gallon version sometime soon.
I've had pickled pike from the salad bar at a few supper clubs in Wisconsin before, it is really tasty. Just as good or maybe better than any pickled herring I've had, I bet the trout would be good too. Making me hungry for it just thinking about it.
