I spent 18 months in Germany when I was in the military. (that's how I got spoiled on GOOD beer)
I can not believe how well this batch turned out. Just a 6 oz. glass has a good kick to it. And I'm not a light weight.

I have posted questions on this yeast previously and heard it was slow.
I do aerate well. The other two batches I have brewed fermented nicely in 7-10 days.
I guess I'll just take the advice from my previous post " Rack it or let ride". And let it ride some more.
What was the longest period of time your ale took to ferment in primary?
I'm in my fourth week with a Doppelbock ale with no sign of slowing.
And my reserve is running low.

You have fun making it. Then you must feed it. Then burp it. Then change it's bottle. Keep cloths on it. Keep it warm. Check it's temperature. And you hope it turns out good after all of the labor and time you have invested in it. Maybe even curse it then hug it.

Had to mash the Munich Malt. Was not an extract. ?? But I,m as green as my beer is.

Yeast was dated Dec. 8. Used on Dec. 25. Activation time was 6 hours. And pack did plump-up nicely.
The sample I pulled was extremely sweat / malty / thick. Tasted good.

Dopllebock ale. Because I'm not set up to lager. It has been two weeks in primary. OG 1.075. Tested at day 14. 1.045. Fermentation restarted after knocking down krausen while drawing a sample and it formed a new head. Should I let it ride another few days and retest? Or should I rack it into...
