    California Common

Brewed a California common (steam beer) last weekend. I pitched with wyeast California lager (2112 I think) and have it at 58F. Still no sign of activity. Is it too cold?

    Cranberry Stout

I want to brew an all-grain chocolate-cranberry stout as a Christmas beer. I have brewed with fruit once before (raspberry wheat ale) by adding fresh frozen into the secondary with great results. This will be my first porter. Can I add fruit in the Mash, or introduce juice into the boil, or...

    First Lager

I do have about 1 inch of foam now. definitely some activity, just not as much as I was hoping. It is a 10 gallon batch, and i pitched 2 activator packs in 2 primaries. I have since lowered my fermentation temp to 60. Should I continue to lower it into the mid 50 range?

    First Lager

I brewed my first all-grain Lager last night. ( I usually make ales) I had my fermentation chamber ready for a temp of 50f, buy come pitching time, I noticed that the wyeast( american lager 2035) used suggests pitching between 60-72. So I pitched at 68, and it has been fermenting for 12 hours ...

My semi walkin 5000 btu fermentation chamber

Like n240sxguy said, you are making things too complicated for yourself. wire your STC to a standard outlet and plug the AC into that. Then just move the temp sensor bulb on your AC outside of your ferm chamber. I was trying to get all fancy as well, and after a week of screwing...

My semi walkin 5000 btu fermentation chamber

If you are talking about main power, it depends on the amperage you are drawing. For an AC unit I wouldn't go any lower than 14

My semi walkin 5000 btu fermentation chamber

Depends on what type of controller you are using. Most AC units require a 3 min rest before a restart, so if your controller has the option (like mine) program a 5 min relay lag to prevent damage to your compressor and you will be fine

My semi walkin 5000 btu fermentation chamber

Single temp probe with 2 relays. I have a small space heater that I will be using in the winter, since this is in my garage. I will keep an eye on it. I checked this morning and the temp is holding steady. I think because it is a smaller space I should be ok.

My semi walkin 5000 btu fermentation chamber

That 3rd picture is the window. I haven't put the outer cladding on yet. There is no fridge. The first version was built around a bar fridge and I used the door on the side of the chamber. The fridge couldn't even keep the interior temp below 70, because it had internal evaporation coils that...

My semi walkin 5000 btu fermentation chamber

This is what I did. Now I wait with fingers crossed Here is a view of the chamber itself I put a window in one end so I don't need to open it to check fermentation progress.

    Ferm Chamber

I believe you are talking about this: http://www.storeitcold.com/index.html I'm not ready to drop another 300 bones on my ferm chamber just yet. I have been getting a lot of help from n240sxguy in his build thread here...
