I use my 6.5 gallon glass carboy for fermentation. I've been keeping my brews in there between 3 to 4 weeks before bottling. I've only done three batches but they have been turning out really well and I've been getting really clear beer too.
Congrats, I know how ya feel. My first brew was decent. My second brew, a porter, has been bottled for 3 weeks and I just tried one last night. I freakin loved it. I can't wait for a couple of more weeks for my amber that I bottled last week. Way to go man.
Thanks Irregular, I wasn't sure if going over 3 weeks would have an adverse effect. After this batch I think I will take your advice and go four everytime with how it worked out.

Ok tonight I bottled my second brew, a friend's Porter recipe. The brew had been in a 6 1/2 gallon carboy for 22 days. I was gonna bottle yesterday but got a little busy. Everything went well and I used 22 ounce bottles for the majority of the batch so I didn't have to fill so much. My OG...
Well the first came out pretty good, it was a Hefi that I am almost out of. The second was a porter that I brewed one week ago so I'll have to let ya know how that turns out as well as this third one! :mug:
Well tonight I attempted my third brew, an amber ale extract recipe with steeping grains. I took some pics which I thought I would share as well.
The recipe consisted of:
1 lb Briess crystal 60L
7 lb Briess Gold malt extract
1/2 oz of cascade hops at 60 min
1/4 oz of saaz hops and 1/4 oz...
Thank you Bobby, so does my Munich malt contribute anything good in this recipe at all since it wasn't mashed or it just a waste of grain to use it without mashing?
