Additional Yeast or Yeast Starter: WLP644 Brett B Trois
Batch Size (Gallons): 5.25
Original Gravity: 1.052
Final Gravity: 1.008
IBU: 32
Boiling Time (Minutes): 90
Primary Fermentation (# of Days & Temp): 16 @ 70-75
Secondary Fermentation (# of Days & Temp): Ongoing
Tasting Notes: Fruity citrus aroma, little lingering bitterness, pleasant spice, needs tinkering



This beer was brewed 6/10 and is currently in secondary with WLP644 Brett B Trois & 2 limes but I'll update as it progresses.

Grain Bill:

4lb Belgian Pils
3lb Golden Promise
1lb White Wheat
.5lb Munich
.5lb Honey Malt
8.5oz Table Sugar (@5min left in boil)

BIAB
Mash Schedule: 150 1 hr
Mash out at 169 for 10 min

Hop Schedule:

60m - 12g Magnum (12.2 AA)
15m - 43g Motueka (7 AA)
0m - 48g Motueka, 28g Galaxy, 28g Pacific Jade

Dry hops - 28g Galaxy & 28g Pacific Jade 10 days in, racked to secondary 6 days later

Brett B Trois added 24 days in. 2 cut up limes added 50 days in. Debacle ongoing. Sample tasted decent on 7/28.

I want this to be one of my flagship beers & I was putting up a blog post for it tonight, so I thought its progression should be documented.
