If I wanted to do my mash today during my lunch break, could I collect the runnings in my kettle and leave it for a about 3-4 hours and come back and do the boil tonight?
 
I've done this many times without any problems for short periods of time.If it's for an extended period of time, say 2-3 days, I'm not sure what may happen. Anyone have any thoughts?
 
You'll be fine. I let my mash sit overnight (about 12 hours) in the coolers and collect the next day with no ill effects. I wouldn't let it sit more than a day because then you'll risk infection
