So I fermented a New Castle Clone with witbread yeast. I let it sit at 68F for a month. When I cracked the lid tons of yeast was floating on top and I had like no trub at the bottom.
Now in the keg about a week later I pulled a few glasses just to see where the carbonation is at and there is still lil yeasties swimming around.
Is this normal activity? Can I wait it out? Or should I go ahead and gel it?
