Hops - silly question?

This could show some ignorance on my part about Hops.

I need to substitute Horizon 13% (60 minutes) with something else.

If I find a hop with the same character (aroma and so forth) BUT only 6%

Can I just add more?? Is that totally whacky???
 
Yes its easy. You add more.

Hop Alfa Acid x Recipe oz of hops = AAU (per addition)

AAU / Substitute Hop Alfa Acid = New Amount of Oz for Substitute.

13% * 1 oz = 13 AAU

13 AAU / 6% = 2.2 oz of the 6% hop

1 oz of horizon @ 13% is the same as 2.2 oz of Cascade @ 6%

You may want to sub something with a low cohumlone (sp?) and not much hop flavor like Magnum. A lot of recipes use these two hops for just that reason.

I suggest everyone that comes into the situation to keep Summit around the house. Summit is not on the list of short hops at least around here anyway.

No problems down here buying whatever you want, I can buy 100g of anything for $7. People who buy in bulk can get a kilo for $50, just ask Graeme.

On a serious note, I normally use northern brewer for bittering, only 7% but a neutral flavoured hop. But theres heaps of others to look at, like columbus, galaxy, POR etc that all come in around 13% AA.

My local suppliers are a few dollars less but not the full range, they cover everything I normally need though.
