OK, I’ll try to be patient here. I think I’ll leave it in the primary for a full two weeks, and give it another two weeks in the secondary.

One question there – is a 5-gallon carboy sufficient as a secondary? I’m assuming it will give me a small amount of headspace, which would be good for not exposing it to too much air. I plan to pick up a 6 or even 7-gallon as my new primary so that I can see what’s happening, but I already have a 5-gallon that I inherited and planned to use as my secondary.

A 5 gallon is fine and what most kits come with (assuming your batch is 5 gallons) the actual space in a 5 gallon carboy is a little more. I asked about using 6 gallon better bottles for secondary and the consensus was that the extra air space is not a problem. I will be only buying the 6 gallon ones and can dry hop in them if needed. I see no reason to have more 5 gallon ones that are too small for my primary use. The 6 gallon ones can do double duty.
