Just popped a bottle of my first ever batch (NB American Wheat) I bottled over 3 months ago. It's amazingly clear, carb'd like a champion (but not overly carb'd to where it's lost its mouth), and tastes incredible.

I was only able to keep 3 bottles this long... hell. It was my first batch. Plan to save the last 2 bottles for a while longer, but I'm amazed at how much the aroma, flavor, and clarity has developed!

What I've learned in the first 4 months:
  • patience is key
  • multiple carboys is def. needed
  • pipeline build up makes life better

I learned that yesterday on my first brew! Even SWMBO said how can you wait a month for that beer. I agreed and said i need a few more fermenters to play with to hold me over.
 
Yup! I sucked down my first batch pretty quick but hid a 6 pack from myself. They were very tasty after 4 months. It is amazing how much the head changes from a fizzy bubble to a creamy topper.
