Northern hops and a Red Wheat extract
I have some extra Northern hops and was wondering if it would be a good (or tasty) idea to use them with a AHS Red Wheat extract kit I recently purchased.

You mean Northern Brewer? Sure - go for it. I'd recommend using recipe formulation software to make sure you get a reasonably balanced recipe.
