i am about to brew my holiday spiced ale.
its an extract kit from AHS.
1/2lb crystal 60
1/2 lb vienna
1/2lb caramunich

6lb extra pale malt extract
1lb munich extract

1/2oz kent goldings for 60 min and the other half ounce at 5 minutes.

so it calls for white labs british ale 005, wyeast london ale 1028 or windsor ale dry eyast.

i dont have any of these yeasts on hand

i do have
nottingham
munich wheat beer yeast(dry)
white labs german ale/kolsch wlp029
and wyeast 3068.

which one would you use?

That, and it's the best choice out of those you listed.

You definitely don't want Munich yeast, or Wyeast 3068 (Weihenstephan) because of the flavors those yeast strains will impart.

The kolsch yeast would be ok, but it's not ideal either. So, the nottingham is the best choice out of that group.

For dry yeast, I'd probably use S04 if I had it.

yea, i wish i had it, i thought i had the requested yeast but i used it last week and didnt realize i only had 1 of them
