Anyone have some tips? I assume I'd just do the cereal mash in a separate brewpot, let the grains sit at 120F while I'm stepmashing/boiling the raw grains, and then add those into the main mash to bring it to temp and mash as normal?

When you add the cereal mashed items like oatmeal or grits to the main mash, do you calculate their weight for mash-in liquid from the grain's dry weight, or the weight after the cereal mash? Might be a stupid question, but Newbies do have special dispensation.
