Sharpie marks are wearing off my desk, so I figured I'd better write them somewhere.

1 Gallon Batch
Lalvin D-47 Yeast
1.5 jugs Santa Cruz Organic Apple Juice ($8/3qt)
Into 1 gallon carboy and set. It says apple juice on the label but its more like american "cider". Unfiltered apple juice. Lots of settling. Probably wont do it again for the price, I misjudged the size of the opening, too big for an airlock.
Starting hydrometer was 1.050
2/6 SG is 1.004 - Sample tastes quite dry, a little dryer than I would like but I'm probably not going to let it keep going.
My plan is to rack and cold crash (hopefully clearing). And backsweeten/carbonate with apple juice concentrate. Or more than likely just cut it with a bit of apple juice and let it live in the fridge for the few days it might take to drink it.
