I press fresh apple juice in the fall and freeze it and thaw and drink.

Was thinking about making hard cider from it.....would this thawed be ok??

The impression I get is that frozen/thawed fruit makes better alcoholic beverages than fresh fruit. As I understand it, freezing/thawing causes the pectins to break down, making it easier to extract juice, and presumably, helping it to clear. The other thing you have the luxury of deciding whether you want to do or not is to thaw the juice and collect the concentrate as it thaws. This could be useful for boosting the gravity. I do it all the time with the Loquats I'm collecting, since the gravity of the raw juice is a tad low for my liking.
