My father-in-law is really interested in making some apple cider, wine, and apple jack this fall and winter. One of my concerns is that the 2.5 gallons of juice we'll use for the wine making will only result in one cup of applejack.
Does anybody know how much the conversion rate will be from one gallon of juice to ______ of applejack (i.e. how much product is actually made)?

If you start with an 10% apple wine (which is easy to do) and shoot for 80 proof, you'll get a quart of applejack per gallon of juicer. Push it to 15%, with more sugar and you'll have a higher yield, but less flavor.
