I am getting ready to make a batch of mead that I want to age for 21 years until my daughter's 21st birthday. I have heard of Meads that keep for years, much like wine. That is what I am looking for.
Does anybody have a recipe such as this? I was thinking something along of a traditional mead. I think a melomel would be cool, but I'm not sure if it would keep as long with the fruit.
What do you all think? Any good recipes?
